Ingredients
2 1/4 lbs Potatoes
1 medium onion
2 eggs
3 tbsp all purpose flour
1/2 tsp baking powder
6 tbsp butter for frying
salt & pepper to taste
Directions
Note: If you have a food processor with a shredding blade use that for easy shredding. If not, any hand grater will do!
Peel the potatoes and grate coarsely into a bowl. Let stand 30 to 40 minutes. They will release juice and oxidize.
Peel onion and grate coarsely. Cover and set aside.
Rinse the grated potatoes under cold water using a strainer.
Wrap potatoes in a clean dish towel and squeeze out as much moisture as you can. Transfer to bowl.
Press onions gently to release excess moisture and add to the bowl with potatoes.
Mix in the eggs, flour, baking powder, and salt & pepper to taste.
Heat butter in large skillet.
Add a large spoonful of potato mixture to pan and press flat. Fry on both sides until golden yellow. Leave to drain on paper towels, then keep warm in the oven at 125 degrees F Continue until all potato mixture has been used.
Enjoy as a side dish, on their own, or with desired toppings such as sour cream or applesauce!
