Winter Squash and Caramelized Onion Tart

1 large butternut squash, peeled, seeded, and cut into 1 inch slices

olive oil

salt/pepper to taste

1 large onion, caramelized

2 cloves garlic, minced

1 apple, sliced

1/2 c shredded cheese of choice

 

For pastry dough:

1 3/4 c flour

1 t sugar

1/2 t salt

1/2 c cold butter, cut into pieces

3 T shortening or lard

4-5 T cold water

 

Roast squash at 400 for 20-30 mins after tossing in olive oil and salt. To make dough - Place flour, sugar, and salt in food processor or just whisk together. Add in butter and shortening. Pulse or mix by hand until there are only pea-sized pieces of butter. Sprinkle in 3 T water and mix until dough just comes together when squeezed. Add more water if necessary. Turn dough onto large sheet of plastic and press into a disk. Cover and roll into a rough circle. Refrigerate at least 15-20 mins. Assembling tart. Roll out dough and drizzle with olive oil. Rub garlic around dough. Place squash, caramelized onion, apple slices. and cheese in center leaving 1 1/2 in free to fold in on itself. Bake at 400 for 30mins. Cut into wedges and serve.
