Stir-Fried Cucumber and Egg


- 2-3 large cucumber
- 1 Medium Onion
- 3 cloves of garlic
- 1 tablespoon of light soy sauce
- vegetable oil
-4 Eggs
Serves 4


Step 1

Peel Cucumber and slice in 1/2 inch slices.  Quarter Each Slice.

Step 2

Peel the garlic cloves and mince the garlic.

Step 3

Chop onion roughly

Step 4

In a wok, heat a little vegetable oil, add the garlic and onion and fry for a few seconds before adding the cucumber slices.

Step 5

Add cucumber to wok.  Stir-fry until the cucumber pieces are all hot, but taking care not to overcook them. The cucumber should still taste crunchy and fresh.

Step 6

Whisk 4 eggs together in a bowl, and add to wok.  Cook Eggs until they are no longer runny along with the onion and cucumber.

Step 7

Splash with soy sauce to taste just before removing from heat.

Step 8

Serve with white rice.
