Scalloped Turnips



2 Tbsp butter
2 tbsp bacon fat
1/2 cup sweet onion chopped
1/2 cup chopped green onions
1 bunch fresh parsley chopped
4 cups peeled, sliced turnips
2 Tbsp flour
1 Tbsp Ground Mustard
Salt to taste
Freshly ground black pepper to taste
1 cup milk
1/2 cup Smith Creamery 1/2 & 1/2
1 8oz container Ryals Feta
1/4 lb bacon crumbles


1 Preheat oven to 350°F. Butter  a 1-quart casserole. Melt 1 Tbsp butter and  bacon fat then lightly sauté sweet onion until just wilted.

2 Layer a third of the sliced turnips in the casserole dish; top with a third of the onion; sprinkle with 2 teaspoons of flour,  salt, and pepper; pat with dollops from 1 tablespoon of butter. Repeat this layering twice.

3 Mix milk, feta, and 1/2 & 1/2 together and pour over the turnips. Cover and bake in a 350°F oven for 30 minutes, then remove cover and bake for another 30-45 minutes, or until tender and bubbly.

Sprinkle with Green onion, parsley, and bacon the last 10 mins.
Serves 4.
For a little extra flavor to stretch a meal add some mushrooms sauted in white wine!
