Greek Village Salad

Makes 4 servings

1 medium pepper, cut into small chunks1 medium cucumber, sliced
1 small onion, leek, or scallion, thinly sliced
2 large tomatoes, cut into small chunks
1/2 cup kalamata olives
3 ounces feta cheese, crumbled

Dressing:
1/4 cup olive oil
1/4 cup red wine vinegar
1 garlic clove, crushed
1/2 teaspoon dried oregano or 2-3 teaspoons chopped fresh oregano
1/2 teaspoon dried dill weed or 2-3 teaspoons chopped fresh dill
salt and freshly ground black pepper to taste

Place first 6 ingredients in a bowl. Combine dressing ingredients in a glass jar with lid, shake well. Pour over salad. Serve at room temperature.
