Eggplant Burgers

Serves 4

4-8 Large Eggplant slices

4 Tbsp Vegetable Oil

8 Slices Italian Bread

4 Leaves escarole, Romaine, or other lettuce

Ketchup, mustard, mayo, or whatever you like on your burger, if desired

4 Pickles

1.  If desired, salt the eggplant slices and let stand for an hour, rinse, and pat dry.  Pour the vegetable oil into a large frying pan and set over medium-high heat.

2.  When the oil begins to shimmer, add one or two slices of the eggplant.  If the oil becomes to hot, lower the heat to medium or medium-low.

3.  Carefully flip the slices every couple of minutes.  They should become brown on the edges after about 5-7 minutes.

4.  Remove the slices from the pan and place them on a plate lined with paper towel to absorb extra oil.  Repeat until all slices are cooked.

5.  Put one or two slices of eggplant between two slices of bread.  Add lettuce to each sandwich and your favorite condiments.  Serve with a pickle.
